Spilling some of my trade secrets

Today, I am taking a big step. I am sharing a closely guarded secret with you all. The recipes for my banana bread and my cranberry, pecans and white chocolate flapjacks. This is not something I share easily but I feel we are at that stage in our relationship now where I can trust you all with it.

These are my most successful recipes in my repertoire and get more requests than the others. So here goes.

Banana bread
150g butter and 80ml of butter milk OR 150ml double cream
225g sugar (soft brown works best)
2 eggs
4 bananas (it’s not an exact science though, it can be as few as 2 or as many as 6)
Vanilla extract
285g plain flour (00 flour will make your bread really soft)
Salt
1.5 tbsp bicarbonate of soda
Drinking chocolate powder

Ok, so I’m setting it down on paper here but it’s not something you should feel restricted by. It’s all quite flexible.

First, turn the oven to 150 degrees.

If you’re using butter, put it in a mixing bowl with sugar and cream it together. If the butter is at room temperature, it will be far easier.

If you are using double cream instead, put it in a mixing bowl and whisk until it is starting to form lumps. This is the point at which it is starting to turn into butter. By staying at this pre-butter stage, your banana bread will take on a totally different texture, much lighter and softer. Add the sugar to this and mix. We’re now at the same stage, whether we’ve used butter or cream.

Next, add the 2 eggs and mix until fully incorporated.

Next put your bananas on top of everything. Take a potato masher and mash the bananas into the mixture. If you prefer to mash the bananas in a separate bowl and add them to your main bowl, you can. But there are more dishes to wash if you do it that way.

If you are using butter instead of double cream, you will need to add your buttermilk here. Add the vanilla extract at this stage as well. I just splash it in. It’s probably 1 tbsp. (Making your own vanilla extract will give it a nicer taste. Just stick some vanilla pods in a bottle of vodka and leave it for 3 months. Simple.)

Next add the flour. This is kind of flexible too. I’ve used every random combination of bits and bobs of flour when I’ve not had the right one in the cupboard and it always works. Last time I used half 00 flour and half wholemeal and I got really good feedback. The only thing I would say is don’t use self raising, as we’re going to add bicarb soon.

If you want to sift your flour through a sieve, you can. I’ve done it sifted and unsifted and I don’t think it makes a difference. Plus, there are more things to wash if you sift it.

Add your salt and bicarb. I just usually grab a pinch of flaky salt and grind between my fingers as I sprinkle it in. When adding the chocolate powder, it’s what you prefer really. It’s not a chocolate flavoured cake. It’s just to add a little something in the background. You want a tablespoon full at the most, I think.

Once it’s all definitely mixed in, grease a loaf tin and line it with greaseproof paper. The paper’s not urgent but if the banana bread decides it wants to stick to the bottom, it will break when you shake it out.

Put the mixture in the tin and put it in the middle of the oven for an hour and a half ish.

Then lick the bowl clean.

Test by putting a knife/skewer into the middle and if it comes out clean, it’s done. Don’t stick too closely to the time. If you see after an hour, it looks done, do the knife/skewer test. Or you might have to leave it longer. If you make it a few times, you’ll learn how it’s supposed to look and go by that.

Leave to cool completely before turning out.

Da dahhh! A banana bread!

Cranberry, pecan and white chocolate flapjacks

150g butter
125g sugar
2 tbsp golden syrup
275g oats
White chocolate
Cranberries
Pecans

Melt the butter in a saucepan with the sugar and golden syrup. Depending on how you like your flapjacks to be, add more or less than the amount I’ve stated for the golden syrup. If you like it stickier, use more golden syrup. If you like it crumbly, add a bit less. I tend to add more as it sticks everything together better and cuts into neater pieces.

When melted, take off the heat and add the oats and a few squares of white chocolate. Mix together. Then add the cranberries and pecans. Again, it’s about personal preference. Add loads or a few, it’s up to you.

Mix well and put the whole mixture into a greased baking tray.

Bake on about 160 degrees for 30-40 minutes, depending on how well done you like your flapjacks.

When you take it out, put it somewhere to cool and grate the rest of your white chocolate over the flapjack. It will melt very quickly. Take a spoon or a palette knife and spread it around evenly. Wait until completely cool before cutting into bars.

Done!

This recipe works with pretty much any flavour combination. You could add different nuts, different fruit, different chocolate. Lightly roasting loads of different nuts and adding them for a plain nutty flapjack is also amazing.

Ok, people. Go into your kitchens and bring forth cakes and flapjacks fit for royalty! (Obviously crediting me while you’re at it.)

And remember, always lick the bowl afterward. And always make sure there is little washing up afterward. You don’t have time for washing dishes, you need to be eating your creations.

My love affair with Waitrose

It’s partly because of the cool rush of air that greets you as you enter. It’s partly because of the amount of things that have ‘organic’ written on the label. It’s also kind of because there’s a whole aisle dedicated to yoghurt. Actually, there are plenty of reasons why I have a long-standing love affair with Waitrose. Let me just tell you about what happened last time I went to see the love of my life.

My shopping list had these things on it:
Shampoo
Conditioner
Asparagus
Something for dinner
Sugar
Eggs

Let’s enter my head to see what actually happened.

Oo! The cool air rush. Mmm. Nice. Ok, grab a trolley. I wonder if people think I’m a grown-up cause I’ve got a trolley. Hee hee. I love pretending to be a grown up. Oo! There’s an offer on something! Raspberries! I’ll just get one box. And another. Ok, I’ll get four! I can make jam with them. I love making jam….

And so it starts. It’s one of those days. One of those days where I have to have one of everything.

Let me get some bananas for banana bread. And a few aubergines. They’re always good. I guess I’ll make a parmigiana with them. So I need tomatoes. I’ll get some strawberries on the way to the tomatoes. Beetroot! Oo, I like raw beetroot shaved into a salad with smoked salmon and rocket. Laura! Calm down! You don’t need everything! Yes I do, I NEEEEED the beetroot. I need it. Ok then, just get it and shut up. Yesssss, beetroot in trolley. Do I need to stop at the fresh pasta section? Not really, but I like lingering there and looking at it and pretending I’m in Italy. Right, moving on, my favourite sections are coming up. The meat and fish counters. I can feel my eyes lighting up. O no! Here I am in front of the counter ordering tons of fish, before I can stop myself. I’m walking away with a bit of everything, scallops, prawns, squid, mahi-mahi, tilapia, salmon, rainbow trout. What on earth did I do that for?! When can I possibly eat all this fish?! O well. Down the chicken aisle. Oo, what to get? The turkey’s on offer, or some duck? Don’t be ridiculous, why would I get a duck for normal dinner at home. I must learn to distinguish when fancy dinner is required and when to just do normal dinner. Ok, I’ve actually got enough fish to feed an army, so maybe I don’t need any chicken. And so to the yoghurt aisle. Too much choice! Too exciting! The nice Waitrose yoghurts made with Jersey cream are amazing. I’ll get one of each flavour. There are about ten flavours. I don’t need them all but I can’t stop myself. And some of the passionfruit flavour. Mmm. And a large vanilla one. Mmm… And some of the Greek stuff. Omygoodness, there is NO way I’ll be able to get all this home. Ah well, keep going. Skip the freezer aisle. Next aisle, tins and cooking stuff. Actually, I’ve run out of ground ginger and oregano so let me get some of those. Next, to the juice, yessss, they’ve got that iced peach tea, two please. Round to the crackers and cereal aisle. I need oats and I’ll get some crackers too, they’re good to have in. Next aisle, need chocolate for making flapjacks. Eggs, yes please. Sugar, two types please. Flour, yes please. I need hazelnuts too actually. I can feel this is becoming slightly crazy. I can’t stop though. Next aisle, spend a while deliberating over which shampoo and conditioner are most suited to my hair. Last aisle, do I need anymore washing up liquid or clothes softener? Foil? Cling film? No I think I’m fine.

And so I emerge from the last aisle, hurrying a little as I try to stop putting things in my trolley. Ridiculous. I didn’t even have everything e.g. parmesan for the parmigiana, salmon or rocket for the beetroot salad I planned, the asparagus that had originally been on my list, etc. I practically ran to the tills, like a guilty lover, trying to pretend the rendezvous had never happened. But it had. I had three heavy shopping bags to prove it. It was one of my silliest shopping trips ever. How much do you reckon I spent? Have a guess and I’ll reveal the answer tomorrow.

Lots to get excited about!

Ok, I’ve been making a point to be more excited about things recently. I found some good stuff too. Joan Rivers’ birthday, Donald Duck’s TV debut, the Jubilee….

And today I have yet more to be excited about. This morning I went swimming. Again? I hear you all say, in admiration. Well yes, again. That’s three times in a swimming pool in the past few weeks. If I keep going at this rate, I’ll need to get some silly goggles and one of those tight caps in a loud colour, like yellow or red. O wait, there’s more. Not only did I go swimming, but I went in the outdoor pool today! How hardcore am I? Actually it’s lovely there because it’s got lovely trees all round it and the sky was blue and the sun was shining on my face and I could almost pretend I was on holiday. I also did a few more lengths than last time so am thinking of letting the Olympic Games committee know to count me in for next time around.

So after a fabulous start to the day I came home and baked some muffins…. Well at least it’s even stevens now. If I hadn’t been swimming then it would have just been the muffins and I think it’s generally frowned upon to just bake batches of muffins every day without at least pretending to do some exercise to have earned them.

They are banana bread muffins but I made them chocolate flavoured and put lots of cherries in them.

Another reason to be excited is because one of my other post-exam goals was to be more sociable and this weekend I have got that covered too. I am channeling my inner country bumpkin and spending the weekend in wellies with some uni friends.

Now the ‘lazy’ part of my username betrays itself a lot in my friendships. I am unfortunately quite a lazy friend. I’ve worked since I moved to London. Even around my full time undergraduate course, I was also working full time and volunteering part time. And when I was at uni, it was easy to see my friends because we were all in the same place. Then we all left, and my schedule didn’t get any less busy, and I didn’t make up for it by ensuring I kept in touch with everyone. So I’m very very guilty of having friendships that I don’t invest as much time in as I should. I will dedicate some time soon to seeing people more often.

That’s partly why this weekend will be so great. The main reason is of course that I’ll get to spend it hanging out in a tractor in wellies. That’s obviously the MAIN reason. But it will also be lovely to see friends again.

Double excitement then! Swimming and weekend away. Woop! I’m off to pack my going-away bag. Lots of waterproofs and warm jumpers! I love an adventure!

Omg, we could solve a mystery or something and then it really WOULD be adventure! I could live out one of my many childhood dreams, to be George from The Famous Five. Hopefully there’s a crime this evening when we arrive!

I touched the key and….

Ok, so I’m still not done with this week’s Chat magazine. You’ll be glad to hear we’re revisiting it and this time, I’m heading to the ‘Spirit World’ section, with Chat’s medium, Tony. Now every week, there’s a picture of a key.

The ‘lucky things that happened to readers’ last week were….

Kate baked the perfect chocolate cake for her son’s birthday.

Peggy learnt to ride a bike (she’s 60).

Maggie’s dog has finally stopped chewing her shoes.

Apparently those things happened because of touching the key. Amazing. So if you’re reading this and you want some amazingly good luck (if you are going to make a cake, ride a bike or get a dog, maybe) close your eyes and touch the key and report back the lucky things that happened to you as a result of it. Let me tell you about my day yesterday after I touched the key. The luckiest day ever!

I woke up at 4.15am to do an online exam, my last thing for my law degree, and my computer didn’t break in the middle of it! Wow!

I made a cup of tea and didn’t spill any of it on myself! Amazing!

I wasn’t late for work! In fact, I was three minutes early… Lucky!

I was very tired but I didn’t fall asleep standing up! Omg!

I had five coffees but didn’t have a heart attack! Gosh!

Someone annoyed me at work but I didn’t punch them! Brilliant!

I had a sleep when I got home from work and didn’t fall out of bed! Yeh!

I made a tasty banana bread! Fantastic!

I made a nice dinner for a friend who came over! Fab!

The football was on but I read a book instead so I wouldn’t get bored! Great!

The washing dried on the line outside so I had clean pyjamas for bedtime! Amazing!

You see? All you sceptics out there. I bet you’re eating your words now, aren’t you? See how LUCKY my day was after I touched the key? I might write in to Chat to let them know how much they helped me and they might put me in their Lucky Key column.

I’d like to thank…

A rather surprising thing happened to me. I was nominated for another blogging award. A ‘Very Inspiring Blogger’ award. How exciting is that? My half-demented, undirected ramblings have been inspiring to someone?! So, channelling my inner Bjork… I am a grateful.. grapefruit.

Thanks to David McGowan firstly, for nominating me. He’s written a very good book calledThe Hunter Inside, and his blog is great for tips on writing (real writing, not random anecdotes, like mine…).

So the rules are that I have to tell David (everyone) seven things about myself. Ok, I’ll try not to repeat the ones I did last time.

1. I’m very particular about which mug my tea is in. I like a big mug but the sides shouldn’t be slanting in or out or anything. I like a straight-sided big-than-your-average mug. With a handle I can get all my fingers into. None of this curly fancy nonsense, that you can only get your first two fingers into. All fingers in the handle and a large, solidly built mug, please. It makes it taste better.

2. Midway through last week (my exam week), I stopped brushing my hair. I haven’t started again yet.

3. In a low point last week, I started eating cake decorations, specifically small sugar hearts and edible red carnation petals. That was a time I’d rather forget.

4. I lost my trainers about two weeks ago and have been too lazy to look for them. (See why I gave myself that name now? LazyLauraMaisey?) I also lost my bank card a few days ago and am sure it will ‘turn up’.

5. I make a lot of my own cake ingredient stuff. Today’s banana bread has homemade butter, homemade buttermilk and homemade vanilla extract in it.

6. I have old-lady hands. Because I work in a deli and sometimes in the kitchen, I’m constantly washing up, using cleaning spray/wipes, burning myself, ripping my fingers apart on the clingfilm thing etc. So I spend at least an hour a day moisturising my hands. I then wash some dishes and it comes off. So I reapply it. Then I make some coffees and it comes off, so I reapply it. Then I’m taking/giving money so it comes off. So I reapply it. Etc etc.

7. I just ate a muffin.

Given that I’m 27 years old and envying someone in their retirement (traditionally a slightly more boring part of life, the immediate associations being gardening and knitting), she’s clearly got it right. She’s fantastic, her blog is fantastic. If I retire as successfully as her, I’ll be pretty pleased.

2. lifeinthedrivethru – Inspiring because… He handles the public so well. Then blogs his real thoughts. It’s like reading my own thoughts sometimes! It’s hilarious.

What runs through my head when I’m falling asleep

This is specific to last night –

Gosh I’m tired. I wonder if I remembered to do everything at work today? Bins out? Yes. Lights out? Yes. Yeah, I did everything. O wait, I didn’t leave the air con on! O no. Dammit.

Is my alarm set? What should I make tomorrow? Banana bread probably. Muffins maybe.

Ok, mini self test. Criminal law. Theft. Where’s the definition found? Erm. Erm. Sleepy. Section 1. I think. Section 1 of the Theft Act. 19 something. Brain slowing down. 1968 I think. That’s all it can handle. Self test over.

Just remembered, I did leave the air con on at work. Phew.

I wonder where my trainers are. I haven’t seen them in days.

My phone needs charging. Too lazy to get out of bed and get the charger.

O no. I need a wee. If I go to sleep really quickly, maybe my body will forget then I can just go in the morning. Nope, I still need one. Ignore it.

Did I turn the oven off? I think so. Mmm, dinner was tasty this evening. Salmon. Mmm. I think I’ll do something chickeny tomorrow for dinner.

Should I try and remember something about mortgages? Stack v Dowden. And Tulk v Moxhay. Hmmm. I don’t remember why they’re important though. O well. Sleep time.

You’ll always be a part of me… I’m part of you indefinitelyyyy… Boy don’t you know you can’t escape me… Oo darlin cause you’ll always be me babyyyyy… What on earth? Go away Mariah.

I can’t wait til my exams are finished.

EVERY DAY!

Look at my pile of textbooks (I don’t mean, looking at the words on the page, I mean looking at the pile, then looking away again)

‘Baking every day?’ you might say. ‘EVERY day?’ Well, yes. I find a way, don’t you worry. Things always need making. Last week I made (are you ready?) banana bread x 2, raspberry marshmallows, plum jam, baklava, an Easter egg, fruity nutty snack bars, vanilla and goji berry muffins x 4, two loaves of bread (one I turned into breadcrumbs) and then all the stuff I ate for my normal meals. I don’t usually eat any of the cakey stuff I make so that’s not my actual calorie intake, in case you’re thinking I must be really hungry all the time!

I like to feed people. I’m definitely a feeder. I like to give people things I’ve made but then there’s the nervousness in case they don’t like it but they’re too polite to say. So there’s the worry and the ‘Is it ok? Are you sure? Is it tasty? It’s ok if it’s not. Did I overcook it? Undercook it? Are there too many nuts in it? Not enough nuts? Are you sure it’s tasty?’

Linked in with that is food shopping. Yes I do that thing everyone does, a big massive shop every few days or every week or something, so why do I need to go every day? Because I like it! I like going through the slidey doors and the cool air welcomes you in and you just walk around, amongst all the food, and feel nice. I wander up and down the jam section, getting ideas for new flavours to experiment with. I potter around the fruit section, seeing if there are any offers on, planning my next baking adventure. I go to the bread and cake section, stealing ideas again. Then to the baking aisle and debate whether the 500 eggs in my fridge are enough or whether I need 6 more. Survey the tea selection. Then I end up at the cookbook section, sneakily reading them cover to cover. Then I emerge back into the sunlight, an hour later, empty handed but feeling wonderful. Sometimes that’s all I need. I’ve had my kick.

Watching TV every day. You know, I couldn’t even tell you what I’ve watched recently. It’s such a mindless activity. And so much time gets absorbed into it. It’s probably the most useless ‘every day’ thing I do. When I’m a bit knackered from work I settle down on the sofa with a cup of tea and stare at it but it’s not really like I’m watching it, I’m in some sort of trance and the TV happens to be there, keeping me company.

I’m not even going to start on ‘think about how soon my exams are’ and ‘look at my pile of textbooks.’ I worked hard all year actually, so it’s not like I’m really intimidated by it. I think it will be fine. It’s just doing it, getting started on the revision. I will. Soon.
